Choc Chip Cookie Recipe
Some of my earliest memories are of being in the kitchen with my Mom while she baked. She made bread and cookies and cakes weekly. We had an kitchen/eating area that was divided by a long counter. I would pull up a chair on the eating side and watch as Mom mixed up cookie dough or rolled out pie crust. Eventually I was tall enough that I could see the counter without the aid of a chair and old enough to help out in the creation process.
In grade school, I remember trading my homemade pound cake for a Little Debbie snack cake and feeling like I got the good end of the bargain. For Mom this was simply the way it was — she had seven people to feed and making dessert instead of buying it was a way to stretch her grocery budget. It wasn’t until I really got serious about my own finances that I realized that Mom was so right. Baking from scratch is pretty easy and much more economical. And, these days has the added bonus of being healthier.
One of my childhood favorites was always chocolate chip cookies. Mom’s choc chip cookie recipe was great. The cookies came out thin and chewy and oh so good!
I remember making them with her recipe but after she died I lost track of the recipe. I don’t think my chocolate chip cookies are nearly as good as hers — my recipe is missing some key ingredient, or measurement.
As I have searched around using the one clue I have: Mom’s recipe called for a 1/4 teaspoon of water. I know this because the first time I made them on my own, I misread the recipe and added a 1/4 cup of water. And wondered why my cookies were so puffy…..
So looking high and low, I think I figured it out. The original Nestle Toll House recipe had a teaspoon of hot water in it. Many cooks dissolved the baking soda into hot water. Sounds weird to us — they thought it was more effective that way. Not true, by the way. Keep your baking soda dry!
Anyway, here’s the recipe that I have been using and been very happy with. It’s been over 10 years since I had one of Mom’s chocolate chip cookies but I think this choc chip cookie recipe is pretty dang good!
1 cup butter, softened
3/4 cup of white sugar
3/4 cup of brown sugar
2 eggs
Cream these ingredients together. Then add in:
2 1/4 cups of flour
1 ts baking soda
1 ts salt
1 ts vanilla
1/4 ts water
Mix the dough to a good consistency and then add in a package of chocolate chips (or 2 cups).M ix until the chips are well distributed.
Bake for 10 minutes at 375 degrees.
