Chocolate Chip Cookie Recipes

Thinking of my search for the choco chip cookie recipe that my Mom used, I thought it was worth it to talk about other good (but not Mom’s) ideas for chocolate chip cookie recipes. There are so many variants of the humble chocolate chip cookie! I wanted to highlight a few of my favorites.

I love oatmeal chocolate chip cookies. And chocolate chip cookies made with ground oatmeal and chocolate-choco chip cookies and choco-espresso cookies.

Oatmeal Chocolate Chip

1 cup butter, softened
1 cup packed light brown sugar
1/2 cup white sugar
2 eggs
2 teaspoons vanilla extract

Mix the wet ingredients together. Then add dry:

1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1 teaspoon salt
3 cups quick-cooking oats
1 cup semisweet chocolate chips

Bake at 375 for 8-10 minutes.

As urban myths go the Neiman Marcus cookie recipe one is the most tasty. I remember my Mom had a xeroxed copy of the letter and recipe. No doubt she got it from someone at work or church. I wish I had that paper copy — how crazy to think back to the time before the digital age, when urban myths had to be propagated the old fashioned way: one photocopy at a time. Here’s the recipe and it is really quite good; different than the recipe that Neiman Marcus has on their site now. It leaves out the ground oatmeal and that is the key to these cookies!

“Neiman Marcus” recipe for chocolate chip cookies (with ground oatmeal)

1 cup butter
1 cup granulated sugar
1 cup brown sugar
2 eggs
1 tsp vanilla

Blend these ingredients together and then add the dry ingredients:

3 cups blended oatmeal (grind it in a food processor)
1/2 tsp salt
1 tsp baking powder
2 cup flour
1 tsp baking soda
12 oz. chocolate chips

Bake for 12 minutes at 350 degrees.

Chocolate Chocolate Chip Cookies

1 cup butter, softened
1 1/2 cups white sugar
2 eggs
2 teaspoons vanilla extract

Cream the butter, sugar, eggs and vanilla. Then add:

2 cups all-purpose flour
2/3 cup cocoa powder
3/4 teaspoon baking soda
1/4 teaspoon salt
2 cups semisweet chocolate chips

Note: cocoa powder is so fine that sometimes the mixer throws a lot of it into the air, when it first starts mixing. Wrap a dish towel around the mouth of the bowl (loosely) to keep the powder from flying out.

Bake at 350 for 12 minutes.

Chocolate Chip Espresso Cookies

1/2 cup butter, softened
1/3 cup granulated sugar
1/3 cup light brown sugar
1 egg
1 tsp vanilla

Cream the ingredients and add:

1 cupĀ  flour
1 tsp instant espresso
1/2 tsp baking soda
1/2 tsp salt
1 cup chocolate chips

Bake at 350 degrees for 10 minutes.
