Sourdough Recipe: Lazy Sourdough Pancakes
I love Saturday mornings because I love big breakfasts. If I’ve forgotten to plan ahead and I admit that happens a lot, here’s an easy recipe for sourdough pancakes.
2 cups of flour
1 1/2 Tbs of sugar
1/2 tsp baking soda
1/2 tsp salt
1 tsp baking powder
Mix the dry ingredients in a large bowl.
Get a frying pan heating on the stove.
In a separate bowl mix:
2 eggs
2 Tbs oil
1/2 cup of milk
Then add in 1 cup sourdough starter and mix.
Add this to the dry ingredients.
Mix together gently. If the batter seems too thick, add more milk (or water). You want a fairly thin consistency.
Use a 1/2 cup measuring cup to pour the batter into the hot frying pan. Let the pancake cook until most of the bubbles pop. Then flip it over and cook for about a minute.
I love making this recipe. The pancakes have a nice backnote of sourdough flavor and a spongy texture as your fork cuts into them. yum.
