Sourdough Recipe: Sour Potato Bread

Who doesn’t love potatoes? Here’s a great way to use leftover mashed potatoes. Make sourdough bread with them! You will need a cup of the water that you cooked the potatoes in, but otherwise no planning needed!

First, in a large bowl, add

1 cup warmed up mashed potatoes
1 cup warmed potato water
1 cup sourdough starter

You don’t want the potatoes and water to be too hot. Just a quick zap in the convection microwave oven will do the trick! Once you have the mixture ready, just cover the bowl and let it sit for an hour. A simple clean cloth works best as a cover. potatoes

Next, combine half a cup of warm water and one package of yeast in a small bowl. Let it proof for about 8 minutes. Add the softened yeast to the sourdough and mashed potato mixture. then add:

2 Tb of sugar
2 Tb of salt
2 Tb of oil
2.5 cups of unbleached flour

Mix this together. This will make a soft dough. Then if you gradually add about another 3 to 4 cups of flour to the dough, you will get a stiffer dough.

I don’t know what I’d do without my Kitchen Aid mixer. I use it, oddly enough, to make mashed potatoes so using it to make mashed potato bread seems fitting. If you have a stand mixer, the dough hook attachment is just about the best thing!

Once you’ve made the dough, the next part is easy. Tip the dough out on to a floured counter top. Dust your own hands lightly with flour because you are about to knead the dough. The mixer has done most of the work for you already, but you still get your hands in the dough. For me that’s the essence of bread baking — getting into the dough.

You just need to knead the dough a few times. Drizzle some olive oil into the mixing bowl. Place the dough upside down in the mixing bowl, but just for a second. You’re kind of dipping the dough into the olive oil. Then place it right side up (rounded side up) in the bowl and cover with a clean cloth. Wait an hour.

You want the dough to have doubled in size. It’s OK if it hasn’t. You can give it another 20 minutes or you can use the dough — your choice. Next grease two bread pans. I like to use Crisco to grease the pans. It gives the crust a nice crunch.

Take the dough out of the bowl and back on to the floured counter top. Knead a couple of times. Divide into two pieces and let them sit for about 10 minutes. Then shape them loosely into rectangular shapes and put them in the bread pans. Cover the pans and set your timer for 40 minutes. You want the dough to double in size.

Preheat your oven to 375. Uncover the bread pans and slash a few lines on the top of the dough. Just lightly — it’s decoration. Bake for about 40 minutes.
